Chocolate Chip Double Doozies

The only words that describe these are "ooohhh yeah".



I had some of my classic chocolate chip cookies left over plus some extra chocolate buttercream icing I used with my oldest sons birthday cupcakes. So I made something special out of them for the boys in my life.  My sis gave me the great idea to make double doozies.  What a bright one she is. 

They look so good and they taste even better!

Take this classic cookie recipe and add my homemade chocolate buttercream icing to the middle of them.  Super easy and super fun for kids and adults.

Classic Chocolate Chip Cookies

Ingredients:
2 cups flour
1 teaspoon baking soda
1 teasoon salt
1 cup butter, soft
1 cup light brown sugar, packed
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 package (12 ounces), semisweet chocolate morsels

Instructions:
Combine flour, baking soda, salt, and sugars in a large mixing bowl. Wisk together.
Add butter, egg, and vanilla extract to flour mixture and beat with an electric mixer until all ingredients are combined.
Stir in chocolate morsels with a spoon.
Bake for 8-10 minutes, on a lined cookie sheet, at 350 degrees.
Allow to cool
Chocolate Buttercream Icing
Ingredients
3 3/4 cups powdered sugar
1 stick unsalted butter
1 tbls Vanilla Extract
4-5 tbls milk
1/2 cup cocoa powder

Instructions:
Combine powdered sugar, cocoa powder, melted butter, vanilla extract and milk to large mixing bowl.
Use electric mixer to mix until smooth.
(I would start out with 4 tbls of milk, then add additional tbls of milk if needed.  I dont like my icing runny.  A little stiffness is good for icing cupcakes special ways.)
